I LOVE cake! Especially birthday cake - with plenty of icing! Craig is a fan of carrot cake, which definitely isn't my favourite. But I finally found a recipe I'm happy not only to bake, but also to each.
It's from the Hummingbird Bakery. And I thought I'd share it with you...
Welcome to my recipe page from the 'In All Things' launch party held on Saturday 24 October. At the party, we chatted about rooibos, a South African herbal tea drink - not one of my favourites but adding all these spices to make a tasty chai latte drink is ideal!
And then something I do love - vetkoek. Maybe not super healthy, but definitely super delicious. Try making some yourself using this family recipe used by a friend's cousin.

Rooibos Chai Latte
1 rooibos teabag (or a black teabag if you can't find rooibos)
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1/4 teaspoon ground ginger
1 cardamom pod
1 clove
honey to taste
1/2 cup boiling water
1/2 cup frothed / hot milk

Pour the boiling water over the teabag and spices
Add honey to taste
Allow to brew for five minutes
Strain into your favourite latte cup
Top with the frothed / hot milk
Dust with cinnamon powder

Vetkoek
2 cups All Purpose Flour
1 cup lukewarm water
5ml sugar
7.5ml instant yeast
5ml oil
5ml salt
​
Mix all the dry ingredients together
Add all the rest of the ingredients and mix well. Leave to rise
Use a spoon to drop balls of dough into very hot oil (use a small spoon for mini-vetkoek)
Fry until golden brown and crispy

Serve with your favourite jam and some grated cheese.
